Blueberry White Chocolate Cookies

Feeling Blue? Try these blueberry cookies, they are delicious and I have to hide them from my kids or they will be gobbled and gone.
These aren't going to make you feel especially guilty. They contain dried blueberries, a healthy dose of oats and whole wheat flour. 
An interesting tidbit on blueberries......studies have been done which have found a correlation between blueberries and satiety (or feeling full). So a bit of blueberry in your diet may help you feel fuller. I have (sort of) tested this out on my husband. I add thawed frozen blueberries to his oats or yogurt in the morning and he thinks it may be helping him to feel fuller and less likely to delve into his office's M and M stash. Whether it makes him fuller or not, blueberries contain cancer fighting antioxidants, and fiber which are good enough reasons to eat them. They, of course, taste good too.


NOTE 
I added corn syrup to the mix because I read somewhere that it gives you a chewier center to your cookie. After trying it out in a few recipes, I have to agree that the cookies have been chewier. This is a benefit when using whole wheat flour in your cookies because you tend to have a drier result. If you would like to omit it, the cookies turn out good either way, just less chewy.     

INGREDIENTS
3/4 c. light margarine or butter (I use original Smart Balance Light with flax seed oil)
3/4 c. brown sugar
2 tbs. corn syrup
1 egg
1 2/3 c. regular (not instant) oats
1 2/3 c. whole wheat flour
1 tsp. baking soda
3/4 c. white chocolate chips
1 c. dried blueberries

DIRECTIONS
1. Preheat oven to 350 degrees F. Spray cookie sheets with non stick spray. 
2. In large bowl mix flour, oats and baking soda.
3. With stand mixer or hand mixer beat margarine, brown sugar and corn syrup until well combined. Add egg and mix well.
4. Slowly add the dry ingredients followed by the chips and berries.
5. Form into tablespoon sized balls and place 2 inches apart on cookie sheets. Bake for about 12 minutes or until lightly browned.
