Red Velvet Pancakes


Valentine's Day is soon upon us. I love this holiday but mostly because of my fond childhood memories of it. My mom would make a special breakfast. Then there was the party at school where everyone gave out cards and candy. Ahhh, memory lane here I come. I actually still have some of the Valentines that I was given as a child. After going through them, it seems that Duck Tales and Gummi Bears were pretty cool at the time.
I found this recipe at  i am baker. I love her blog, it's filled with good recipes. She made this pancake for Memorial Day, but I figure a red pancake also should be eaten on Valentine's Day, especially when cut into the shape of a heart using a cookie cutter. So if you are like me and love making cutesy holiday breakfasts then give this one a try, it looks and tastes great.

RED VELVET PANCAKES from i am baker

INGREDIENTS

1 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3 tbs. white sugar
2 tbs. unsweetened cocoa powder
1 large egg
3/4 c. buttermilk
1/4 c. sour cream
1/8 tsp. red gel food coloring
2 tsp. vanilla extract

DIRECTIONS

Combine all dry ingredients (flour, baking powder, baking soda, salt, sugar, cocoa powder) in large bowl and set aside.  In a separate bowl, whisk together egg, buttermilk, sour cream, food coloring, and vanilla.  Add wet ingredients to dry, and mix until just combined.
Pour about 1/3 cup onto med. high griddle and lightly brown on both sides.
